Two After-School Snacks That Your Kids Will Surely Love

Almond-Oat Bites

This snack can be prepared in just fifteen to thirty minutes. It yields sixteen bites that is already good for two persons! So, throw away your junk food and turn your snack time into a healthy fun tie with your young ones. These Almond-Oat Bites are kid- and adult-friendly, an excellent snack, a fun dessert after dinner or a great breakfast option.

What you will need:

  • A cup of organic or old-fashioned rolled oats
  • 1/4 cup of ground flax
  • 1/4 cup of chopped organic almonds
  • 2 tablespoons of mini chocolate chips, dark
  • 1/4 cup of ground almonds
  • 1/4 cup plus 2 tablespoons of melted almond butter thatís organic, slightly cooled
  • 1/4 cup plus a tablespoon of organic honey
  • 1/4 teaspoon of vanilla extract, pure
  • 2 tablespoons of chia seeds
  • 1/8 teaspoon of cinnamon
  • A pinch of sea salt

What you will do:

1. Mix and stir the oats, flax, almonds, salt, chia seeds as well as the cinnamon in a big mixing bowl.

2. Melt the butter over medium to low heat in a saucepan. Once the butter has melted, turn off the heat and mix in the vanilla and the honey. After the mixture has slightly cooled, pour it on the oat mixture and mix well using a spoon. Then, fold the chocolate chips in.

3. Roll into tiny bite-sized balls before rolling again on the ground almonds. Make sure to coat all sides.

4. Chill in the fridge before serving.

You can also add additional ingredients to make this snack healthier like shredded coconut (unsweetened and organic), raisins, goji berries, dried cranberries, chopped dates, unsalted or raw sunflower seeds, dried cherries, walnuts, hemp seeds, cashews, pecans, etc.

Carrot-Squash Pot Stickers

This snack will be ready in less than an hour. It can add an Asian delight to your after-school moment. moreover, you also have other options aside from squash and carrots. You can as well use ginger, mushrooms, bell peppers, cabbage, cilantro, parsley, apples or sweet potato.

What you will need:

  • A pack of wonton wrappers
  • A small butternut or other type of squash, peeled and then cubed
  • 3-4 carrots, peeled and then diced
  • A small onion, diced
  • Olive oil for pan coating
  • Fresh pepper and salt to taste

What you will do:

1. SautÈ the carrots, onion and squash in a small amount of olive oil on medium heat till they become tender. Transfer into a bowl and mash. Season with pepper and salt and stir well.

2. Flatten the wonton wrapper on a surface and place a small quantity of the carrot and squash mixture on the wrapper.

3. Outline the wrapper edges lightly with a small amount of water using your fingers. Fold triangularly. Put to one side over a sheet of baking paper and cover using a damp paper towel to keep it tacky.

4. Do the same for the remaining filling and wrappers.

5. Coat a pan lightly using olive oil. Cook the pot stickers by batch, until both sides turn golden brown.

Citrus and Tamari Dressing

What you will need:

  • 1/4 cup of tamari
  • 1 juiced orange
  • 1 teaspoon of sesame oil
  • 1-2 cloves of minced garlic
  • 1-2 finely diced scallions

What you will do:

Whip everything together and serve with beside the pot stickers.
